Shaved Carrot Salad with Creamy Sesame-Ginger Dressing
A refreshing salad featuring tender shaved carrots and crunchy carrot matchsticks, perfectly complemented by a creamy sesame-ginger dressing. Ideal as a picnic side in summer or a fresh, crunchy dish in winter.

Ingredients
- 3 tablespoons tahini
- 3 tablespoons extra-virgin olive oil
- 3 tablespoons seasoned rice vinegar
- 2 teaspoons fresh ginger grated
- 1 teaspoon soy sauce
- 1 clove garlic grated on a Microplane
- 0.5 teaspoon kosher salt
- 1 tablespoon cold water
- 1.5 pounds carrots trimmed and peeled
- 0.5 cup scallions thinly sliced (2 to 3 scallions)
- 1 teaspoon sesame seeds
Instructions
- In a medium bowl, whisk together the tahini, olive oil, vinegar, ginger, soy sauce, garlic, and salt. Add the cold water and whisk until smooth and creamy. Set aside.
- Using a mandoline or a vegetable peeler, shave the carrots into long ribbons and place in a large bowl. (If you're using a vegetable peeler, hold each carrot flat against your cutting board with one hand and peel with the other.) Chop any leftover carrot pieces into matchsticks and add to the bowl, along with the scallions.
- Pour the dressing over the salad and toss well with tongs. Sprinkle with sesame seeds and serve.
