Miso Brothy Rice With Crispy Gochujang Tofu
A comforting and easy-to-make dish featuring miso brothy rice and crispy gochujang tofu. Topped with bok choy, seaweed, green onions, and leftover sauce marinade.

Ingredients
- 1 block extra firm tofu
- 1 tablespoon gochujang
- 1 tablespoon miso
- 1 tablespoon soy sauce
- 1 tablespoon maple syrup
- 1 teaspoon 5 spice
- 1 cup rice
- 1 tablespoon butter
- 1 tablespoon miso
- 1 teaspoon salt
- 1 teaspoon ginger
- 1 bunch bok choy
- 1 sheet seaweed
- 2 stalks green onions
Instructions
- Press the extra firm tofu and cut it into slabs.
- Score the tofu slabs on both sides.
- Prepare the marinade by combining gochujang, miso, soy sauce, maple syrup, and 5 spice.
- Marinate the tofu slabs in the prepared marinade and let it sit until the rest of the components are prepped.
- Pan fry the marinated tofu until golden.
- Prepare the rice by adding butter, miso, salt, and ginger.
- Prepare the toppings by chopping bok choy, seaweed, and green onions.
- Top the rice with the prepared toppings and leftover sauce marinade.
