Garlic Butter Shrimp and Asparagus Pasta

This quick and easy pasta dish features juicy shrimp, tender asparagus, and a rich garlic butter sauce that coats every strand of spaghetti. It’s a light yet satisfying meal!

Garlic Butter Shrimp and Asparagus Pasta

Ingredients

  • 8 oz spaghetti or linguine
  • 0 salt for boiling water
  • 0.5 cup water reserved pasta water
  • 1 tbsp butter
  • 1 tbsp olive oil
  • 1 lb large shrimp peeled and deveined
  • 0 salt
  • 0 black pepper
  • 0.5 tsp red pepper flakes optional, for heat
  • 1 tbsp butter
  • 1 tbsp olive oil
  • 1 bunch asparagus trimmed and cut into 2-inch pieces
  • 4 cloves garlic minced
  • 1 tbsp butter
  • 0 lemon juice juice of 1 lemon
  • 0.5 cup grated Parmesan cheese
  • 0 fresh parsley chopped, for garnish

Instructions

  1. Cook the pasta in a large pot of salted boiling water according to package instructions until al dente. Reserve 1/2 cup of pasta water, then drain and set aside.
  2. In a large skillet, heat 1 tablespoon of butter and 1 tablespoon of olive oil over medium-high heat. Add the shrimp, season with salt, pepper, and red pepper flakes (if using), and cook for 2-3 minutes until pink and opaque. Remove the shrimp from the skillet and set aside.
  3. In the same skillet, add another tablespoon of butter and olive oil. Add the asparagus and cook for 3-4 minutes until tender but still crisp. Add minced garlic and sauté for 1 minute until fragrant.
  4. Add the cooked pasta to the skillet with asparagus. Add the remaining tablespoon of butter, lemon juice, and reserved pasta water. Toss to coat.
  5. Return the shrimp to the skillet, sprinkle with Parmesan cheese, and toss everything together. Cook for another 1-2 minutes until the sauce thickens slightly.
  6. Garnish with fresh parsley and serve hot.
