Banana Bread French Toast with Caramelized Bananas

Ingredients
- 4 pieces large eggs
- 0.25 cup unsweetened non-dairy kefir or drinkable yogurt
- 0.5 teaspoon ground cinnamon
- 8 slices Banana Bread
- 0 ghee, coconut oil, or salted grass-fed butter
- 0 maple syrup optional
- 0 caramelized bananas optional, recipe follows
- 2 tablespoons ghee, coconut oil, or salted grass-fed butter
- 3 tablespoons coconut sugar
- 0.5 teaspoon fine sea salt
- 2 pieces ripe bananas sliced
Instructions
- In a wide, shallow bowl, whisk together the eggs, kefir, and cinnamon.
- Dip each slice of banana bread in the egg mixture and let soak for about 10 seconds before flipping to soak the other side.
- Grease a large skillet with ghee. Place it over medium heat and add a soaked banana bread slice. Cook the first side until caramelized, about 4 minutes. Flip to cook on the other side until caramelized, about 4 minutes more. Repeat with the remaining slices.
- Serve immediately with the toppings of your choice.
- In a large skillet over medium heat, add the ghee and coconut sugar. Stir together until the coconut sugar begins to melt. Stir in the salt.
- Place the banana slices in the coconut sugar mixture and let cook until golden brown and caramelized, about 3 minutes. Flip each banana slice to cook on the other side for another 3 minutes.
- Pour the caramelized bananas over the top of the French toast and serve immediately.
