Fried Green Tomatoes with Zesty 'Cheese' Sauce

There is truly nothing like the bite of a fried green tomato. This recipe is worth your time in the kitchen, producing crispy and flavorful fried green tomatoes paired with a zesty and creamy non-dairy 'cheese' sauce.

Fried Green Tomatoes with Zesty 'Cheese' Sauce

Ingredients

  • 0.5 cup cassava flour
  • 0.25 teaspoon fine sea salt
  • 1 cups unsweetened non-dairy kefir
  • 0.5 teaspoon sweet paprika
  • 1 cup cassava flour
  • 0.5 teaspoon fine sea salt
  • 0.5 teaspoon sweet paprika
  • 0.25 teaspoon freshly ground black pepper
  • 0 avocado oil enough to reach ¼ inch up the side of the pan
  • 3 green tomatoes sliced ¼ inch thick
  • 0.5 cup almond ricotta or store-bought non-dairy ricotta or goat cheese
  • 0.5 cup unsweetened non-dairy kefir or goat milk kefir or drinkable yogurt
  • 1 teaspoon cayenne pepper
  • 0.5 teaspoon fine sea salt
  • 0.25 teaspoon sweet paprika

Instructions

  1. In a shallow bowl, whisk together ½ cup of cassava flour and ¼ teaspoon of sea salt.
  2. In a second shallow bowl, whisk together the unsweetened non-dairy kefir and ½ teaspoon of paprika.
  3. In a third shallow bowl, whisk together the remaining 1 cup of cassava flour, ½ teaspoon of salt, ½ teaspoon of paprika, and black pepper.
  4. In a large cast-iron skillet or frying pan over medium heat, add avocado oil until it reaches about ¼ inch up the side of the pan. Heat to about 350°F. You will know your oil is ready when a pinch of flour sizzles but does not spit when dropped in the oil.
  5. Dredge each tomato slice in the first flour mixture, then the kefir mixture, followed by the seasoned flour mixture.
  6. Working in batches, place the tomatoes in the oil to pan-fry until the first side is golden brown and crispy, about 3 minutes. Flip to pan-fry until the other side is golden brown and crispy, about 3 minutes more. Place the fried green tomatoes on a drying rack or paper towels to drain. Serve right away with Zesty 'Cheese' Sauce.
  7. In a small bowl, whisk together all ingredients for the Zesty 'Cheese' Sauce. This can be stored in a sealed container in the refrigerator for up to 1 week.
