Chicken In A Cajun Cream Sauce

Ingredients

  • 3 pieces chicken thighs
  • 1 to taste salt
  • 1 to taste black pepper
  • 0.75 cup all purpose flour
  • 1 as needed olive oil
  • 1 tablespoon butter
  • 4 cloves garlic
  • 0.5 piece onion
  • 1 tablespoon Cajun seasoning
  • 1 heaping teaspoon paprika or cayenne and Italian seasoning
  • 0.75 cup chicken broth
  • 1 cup heavy whipping cream
  • 0.5 cup Parmesan cheese
  • 1 teaspoon (optional) cornstarch
  • 1 as needed rice

Instructions

  1. Season the chicken thighs with salt and pepper.
  2. Dredge the seasoned chicken in all purpose flour.
  3. Add olive oil to a pan and shallow pan fry each chicken thigh 5 to 6 minutes on each side. Use a lid if needed to cook so that the chicken cooks all the way through. Remove the chicken to a plate.
  4. To the same pan, add a tablespoon of butter and sauté garlic and onions for about 30 seconds, do not burn.
  5. Lower the heat and add your Cajun seasoning, paprika, and Italian seasoning.
  6. Add your chicken broth, heavy whipping cream, Parmesan cheese and cook until the sauce is thickened about 4-5 minutes. (you can add a teaspoon of cornstarch to thicken the sauce if needed.)
  7. Tuck in your chicken and let it come together with the sauce for a couple of minutes.
  8. Serve over rice.
