Smashed Potato, Pea And Feta Salad
A delicious salad made with smashed baby potatoes, peas, edamame beans, feta cheese, red onion, and cucumber, dressed with a honey mustard vinaigrette.

Ingredients
- 300 g baby potatoes
- 1 tbsp olive oil
- 1 pinch salt
- 0.5 red onion
- 3 inches cucumber
- 1 tbsp olive oil
- 1 tbsp apple cider vinegar
- 2 tsp honey
- 1 tsp dijon mustard
- 120 g peas
- 100 g edamame beans
- 100 g feta
Instructions
- Preheat the oven to 200 degrees Celsius.
- Boil the baby potatoes for 10-15 minutes until they are soft when poked with a knife.
- Drain the potatoes, add them to a baking tray and smash them down with the base of a glass. Drizzle with a little olive oil and salt, then roast for 25-30 minutes until crispy.
- While the potatoes roast, finely dice the red onion and chop the cucumber. Whisk together the dressing ingredients: olive oil, apple cider vinegar, honey, and dijon mustard.
- Once the potatoes are done and have cooled to room temperature, assemble your salad: add the potatoes to a large salad bowl along with the peas, edamame beans, red onion and cucumber. Crumble over the feta, drizzle over the dressing and toss everything together. Divide between two and enjoy!
