30 Minute Crispy Thai Peanut Chicken Ramen

Ingredients

  • 1 pound boneless skinless chicken thighs or breasts
  • 2 tablespoons flour or cornstarch
  • 3 tablespoons salted butter
  • 4 cloves garlic
  • 1 tablespoon sesame seeds
  • 4 cups chicken bone broth
  • 14 ounces coconut milk
  • 0.25 cup tamari or soy sauce
  • 2 tablespoons fish sauce
  • 0.33 cup creamy peanut butter
  • 0.25 cup Thai red curry paste
  • 2 cups kale
  • 1 piece bell pepper
  • 1 tablespoon fresh grated ginger
  • 3 squares ramen noodles
  • 0.33 cup fresh basil or cilantro

Instructions

  1. Slice the boneless skinless chicken thighs or breasts.
  2. Coat the sliced chicken with flour or cornstarch.
  3. Melt the salted butter in a pan and add the chopped garlic.
  4. Add the sesame seeds to the pan.
  5. Pour in the chicken bone broth, coconut milk, tamari or soy sauce, and fish sauce.
  6. Stir in the creamy peanut butter and Thai red curry paste.
  7. Add the chopped kale, chopped bell pepper, and grated ginger to the pan.
  8. Add the ramen noodles to the pan and cook until soft.
  9. Garnish the ramen with fresh basil or cilantro before serving.
