Spicy Shrimp and Grits

Spicy Shrimp and Grits

Ingredients

  • 800 milliliters water
  • 250 milliliters milk
  • 200 grams quick-cooking grits
  • 50 grams butter
  • 100 grams cheddar cheese grated
  • 0.5 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons olive oil
  • 2 cloves garlic minced
  • 400 grams shrimp peeled and deveined
  • 2 teaspoons Cajun seasoning
  • 0.5 teaspoon salt
  • 2 stalks scallions sliced

Instructions

  1. In a large saucepan, bring 800 ml of water and 250 ml of milk to a boil over medium-high heat. Liquid is boiling
  2. Gradually whisk in 200 grams of quick-cooking grits, reducing the heat to low. Cook, stirring frequently, for about 5-7 minutes until thickened. Grits are thickened
  3. Stir in 50 grams of butter and 100 grams of grated cheddar cheese until melted and smooth. Season with 0.5 teaspoon of salt and 0.5 teaspoon of black pepper. Keep warm. Grits are creamy and smooth
  4. In a medium skillet, heat 2 tablespoons of olive oil over medium heat. Add 2 minced garlic cloves and sauté for 1 minute until fragrant. Garlic is fragrant
  5. Add 400 grams of shrimp to the skillet and season with 2 teaspoons of Cajun seasoning and 0.5 teaspoon of salt. Cook for 3-4 minutes, stirring occasionally, until the shrimp are pink and opaque. Shrimp are pink and opaque
  6. Serve the shrimp over the prepared grits, garnished with sliced scallions if desired. Dish is assembled and ready to serve
