Roasted Acorn Squash with Maple Glaze

Roasted Acorn Squash with Maple Glaze

Ingredients

  • 2 whole acorn squash halved and seeded
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 60 milliliters maple syrup
  • 30 grams butter melted
  • 0.5 teaspoon ground cinnamon

Instructions

  1. Preheat the oven to 400°F (200°C). Oven is preheated to 400°F.
  2. Place the halved and seeded acorn squash on a baking sheet, cut side up. Drizzle with 2 tablespoons of olive oil, and sprinkle with 1 teaspoon of salt and 0.5 teaspoon of black pepper. Use a basting brush to evenly coat the squash. Squash is evenly coated with oil and seasoning.
  3. Roast the squash in the preheated oven for 25 minutes, or until the squash is tender when pierced with a fork. Squash is tender and starting to caramelize.
  4. In a small mixing bowl, combine 60 ml of maple syrup, 30 grams of melted butter, and 0.5 teaspoon of ground cinnamon (if using). Mix well. Maple glaze is smooth and well combined.
  5. Remove the squash from the oven and brush the cut sides with the maple glaze. Return to the oven and roast for an additional 10 minutes, or until the glaze is bubbly and caramelized. Glaze is bubbly and caramelized.
  6. Serve the roasted acorn squash warm, optionally garnished with additional ground cinnamon or fresh herbs. Dish is ready to serve.
