Shrimp Tostadas With Macha Sauce And Peach
Delicious shrimp tostadas with a unique peach and macha sauce that tastes like chamoy. The tostadas are topped with a fresh shrimp ceviche and a layer of guacamole.

Ingredients
- 2 tbsp macha sauce
- 0.5 cup green lime juice
- 3 tbsp white vinegar
- 0.5 whole peach or nectarine
- 0.5 tsp honey
- 0 salt
- 0 pepper
- 500 g medium shrimp, peeled, deveined, cooked and chopped
- 0.25 cup red onion, chopped
- 1 whole peach, chopped
- 0.25 cup basil and/or fresh cilantro, chopped
- 1.5 whole saladet tomatoes, chopped
- 1 tbsp serrano chili, chopped, deveined and without seeds
- 0 salt
- 0 pepper
- 1 cup green lime juice
- 1 tbsp olive oil
- 0 peach and macha sauce
- 0 shrimp ceviche
- 1 whole ripe avocado
- 0.5 whole green lime juice
- 0 salt
- 0 pepper
- 8 whole corn tostadas
- 0 guacamole
- 0 shrimp ceviche
- 0 cilantro, chopped
Instructions
- Prepare the peach and macha sauce by blending all the ingredients in a blender. Taste and adjust seasoning as needed.
- In a bowl, mix the shrimp with the red onion, peach, basil (or cilantro), tomato, serrano chili, salt and pepper. Add the lime juice, olive oil and mix well. Taste and adjust seasoning as needed.
- Pour the peach sauce over the shrimp ceviche and mix until all the flavors are integrated.
- For the guacamole, mash the avocado with a little lime, salt and pepper. Taste and adjust the seasoning.
- Place a layer of guacamole on the tostadas, add the shrimp ceviche on top and finish with chopped cilantro.
