Crispy Gnocchi Burrata & Tomato Salad

Shaking things up a bit for episode 10 of pasta salads with crispy gnocchi!!! A must try. Super fun little crispy bites

Crispy Gnocchi Burrata & Tomato Salad

Cook time: 30 minutes

Servings: 2

Ingredients

  • 200 g cherry tomatoes
  • 1 tbsp olive oil
  • 2 cloves garlic cloves
  • 1 pinch salt
  • 1 pinch pepper
  • 0.5 tsp chilli flakes
  • 1 pack gnocchi
  • 1 tbsp olive oil
  • 1 tsp paprika
  • 1 tsp garlic powder
  • 0.5 tsp chilli powder
  • 1 pinch salt
  • 1 pinch pepper
  • 1 pack gnocchi
  • 200 g cherry tomatoes
  • 1 ball burrata
  • 1 shallot shallot
  • 1 handful fresh basil
  • 1 pinch salt
  • 1 pinch pepper
  • 1 drizzle balsamic glaze

Instructions

  1. If roasting tomatoes (skip this step if you’d rather just use raw tomatoes) toss with olive oil, a few sliced garlic cloves, salt, pepper & optional chilli flakes. Roast for 20 mins or so until blistered & jammy. Allow to cool.
  2. Toss gnocchi (straight from the pack! do not boil) with olive oil, paprika, garlic powder, chilli, salt & pepper. Air fry at 200°C for 10 or 15 minutes shaking halfway, until golden and crisp. Let cool. If using a normal oven - roast for around 20-25 mins.
  3. In a large bowl combine gnocchi, tomatoes, burrata, shallots & basil. Season with a little extra salt & pepper. If you fancy an extra zing add a drizzle of balsamic glaze.
