French Onion Soup Dip

Cook time: 75 minutes

Servings: 6

Ingredients

  • 4.5 small yellow onions
  • 2 tbsp butter
  • 1 tbsp olive oil
  • 0.5 tsp salt
  • 1 tbsp red wine vinegar
  • 1 tbsp balsamic vinegar
  • 1 tsp Worcestershire
  • 5 sprigs fresh thyme
  • 0.25 cup beef broth
  • 8 oz cream cheese
  • 0.5 cup sour cream
  • 1 cup Mozzarella
  • 1 cup Swiss cheese
  • 1 baguette

Instructions

  1. Heat a skillet over medium high heat. Add the butter and oil and once hot and melted, add the onions and a generous pinch of salt. Toss to combine.
  2. Reduce heat to medium low, let the onions cook, slowly caramelizing and stirring every few minutes, so they don’t burn on the bottom of the pan. This should take at least 40-45 minutes or more.
  3. When the onions are softened and browned, add the vinegars, Worcestershire and thyme leaves, tossing well to combine. Add in the beef broth, season with salt and freshly ground black pepper and simmer for a few more minutes until the onions soak up the broth.
  4. Preheat oven to 400° F.
  5. Combine softened cream cheese and sour cream in a large bowl. Stir in caramelized onions and shredded mozzarella. Pour mixture into an oven safe dish. Top with shredded Swiss cheese.
  6. Bake for 15-20 minutes, or until hot and bubbly. Let cool for five minutes.
  7. Garnish with additional thyme. Serve with sliced baguette and enjoy!
