Fig & Caramelized Hot Honey Grilled Cheese

Cook time: 30 minutes

Servings: 1

Ingredients

  • 2 tbsp Avocado oil
  • 1 Small red or white onion
  • 1 pinch Salt
  • 1 splash Water
  • 1 tbsp Balsamic vinegar
  • 2 slices Sourdough bread
  • 2 tbsp Butter mixed with cinnamon & sugar
  • 1 spread Fig jam
  • 0.5 cup Shredded Gruyere cheese
  • 1 serving Sliced figs
  • 1 sprinkle Fresh thyme leaves
  • 1 serving Sliced Havarti cheese
  • 1 sprinkle Flaky sea salt
  • 1 drizzle Hot honey
  • 1 drizzle Balsamic glaze

Instructions

  1. In a skillet on medium heat pour in the avocado oil about 2-3 tbsp.
  2. Put the onions in with a pinch of salt & turn to medium-low. You want the onions to cook low & slow here so they release their natural sugars.
  3. Add a splash of water if the pan seems too dry & stir every few minutes.
  4. Once the onions are soft about 10 minutes pour in 1 tbsp balsamic vinegar. Mix for a couple of min then turn off heat.
  5. Preheat oven to 350 degrees.
  6. Butter opposite sides of bread then flip over to spread on the fig jam.
  7. Add the shredded cheese, caramelized onions, figs, thyme, sliced havarti, sea salt, hot honey & balsamic glaze.
  8. Carefully close the sandwich & transfer to a skillet on medium heat. Press bread down with the back of the pan & cook until golden then flip & cook the other side making sure the outer bread doesn’t burn.
  9. Transfer to the oven for 5 min to make sure it’s all cheesy. Slice in half & enjoy by itself or with your fave fall soup!
