Choco Chip Pancakes
Fluffy and delicious pancakes studded with sweet chocolate chips, perfect for a comforting breakfast or brunch.

Ingredients
- 1 cup flour
- 1 tsp baking powder
- 0.25 tsp baking soda
- 0.25 tsp salt
- 1 tbsp olive oil
- 2 tbsp sugar
- 2 eggs
- 1 tsp vanilla extract
- 0.5 cup milk
- 0.25 cup chocolate chips
- 0 butter for greasing
- 0 maple syrup for serving
- 0 chocolate chips a handful for serving
Instructions
- In a large bowl, combine flour, baking powder, baking soda, and salt.
- In another bowl, whisk together olive oil and sugar until combined. Add in eggs, vanilla extract, and milk. Whisk until smooth.
- Create a well in the dry ingredients. Pour in the wet ingredients and fold together until just combined. Do not over-mix; some lumps are fine.
- Gently fold in the chocolate chips into the batter.
- Let the batter sit for a few minutes while you preheat a griddle or pan over medium heat. Grease the griddle/pan with some butter.
- Add batter 1/4 cup at a time onto the griddle/pan. Cook for 2-3 minutes until bubbles form on the surface, then flip and cook for another 1-2 minutes until golden brown.
- Serve the pancakes warm with some maple syrup and an extra handful of chocolate chips if desired. Enjoy!
