Ingredients

  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 0.5 teaspoon baking soda
  • 0.5 teaspoon ground cinnamon
  • 0.25 teaspoon ground nutmeg
  • 0.5 teaspoon black pepper freshly ground
  • 0.25 teaspoon salt
  • 0.5 cup canned pumpkin puree
  • 0.25 cup ricotta cheese
  • 0.25 cup sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2 tablespoon butter melted
  • 0 all-purpose flour mixture previously mixed
  • 2 tablespoon milk
  • 0.25 cup granulated sugar
  • 2 tablespoon maple sugar
  • 1 teaspoon ground cinnamon
  • 2 tablespoon butter melted for rolling
  • 0 Cinnamon-Maple Sugar Coating previously mixed

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a mini muffin tin or a donut hole pan with butter or non-stick spray.
  2. In a large bowl, whisk together the flour, baking powder, baking soda, ground cinnamon, ground nutmeg, black pepper, and salt.
  3. In another bowl, whisk together the pumpkin puree, ricotta cheese, sugar, egg, vanilla extract, and melted butter (or oil). Stir well until everything is smooth.
  4. Gradually add the dry ingredients to the wet mixture, stirring just until combined. Add milk 1 tablespoon at a time until the batter reaches a thick, but scoopable consistency (not too runny).
  5. Use a spoon or a small cookie scoop to portion the batter into the prepared mini muffin tin or donut hole pan. Fill each about 3/4 full. Bake for 10-12 minutes until the donut bites are golden and a toothpick inserted into the center comes out clean.
  6. In a small bowl, mix together the granulated sugar, maple sugar, and ground cinnamon for the Cinnamon-Maple Sugar Coating.
  7. After the donut bites have cooled slightly, brush them with melted butter, then roll them in the cinnamon-maple sugar mixture until fully coated.
  8. Enjoy the warm, spiced, and sweet pumpkin donut bites! They’re best served fresh but can also be stored in an airtight container for up to 2 days.
