Almond Croissant Peach Cobbler

Ingredients

  • 7 large, sliced peaches
  • 0.3333333333333333 cup brown sugar
  • 0.3333333333333333 cup white sugar
  • 0.25 cup whiskey
  • 1 tablespoon vanilla
  • 1 teaspoon cinnamon
  • 1 tablespoon cornstarch
  • 1 splash lemon juice and zest
  • 1 pinch salt
  • 120 grams, cold, cubed butter
  • 1.33 cup flour
  • 0.25 cup white sugar
  • 0.25 cup brown sugar
  • 1 tablespoon baking powder
  • 0.5 cup whipping cream
  • 60 grams, softened butter
  • 0.3333333333333333 cup sugar
  • 1 egg
  • 1 cup almond flour
  • 1 tablespoon flour
  • 1 handful sliced almonds
  • 1 sprinkle sugar
  • 1 scoop vanilla ice cream

Instructions

  1. Preheat the oven to 200 degrees Celsius.
  2. In a bowl, mix all the peach ingredients together and transfer to a greased mold. Bake in the oven for 15 minutes.
  3. For the cobbler: In a bowl, mix flour, sugar, baking powder, then add butter and mash well with a cutter. Add cream and integrate.
  4. For the frangipane: In a bowl, mix egg, sugar, vanilla, butter, then add flours and mix.
  5. Remove the peaches from the oven and layer the cobbler and frangipane mixtures on top, alternating between the two.
  6. Add sliced almonds and sugar on top.
  7. Place in the oven and reduce the temperature to 170 degrees Celsius. Bake for 40 minutes.
  8. Serve with vanilla ice cream.
