Almond Croissant Peach Cobbler
A warm and aromatic almond croissant peach cobbler to bid farewell to summer and welcome autumn.

Ingredients
- 7 large, sliced peaches
- 0.3333333333333333 cup brown sugar
- 0.3333333333333333 cup white sugar
- 0.25 cup whiskey
- 1 tablespoon vanilla
- 1 teaspoon cinnamon
- 1 tablespoon cornstarch
- 1 splash lemon juice and zest
- 1 pinch salt
- 120 grams, cold, cubed butter
- 1.33 cup flour
- 0.25 cup white sugar
- 0.25 cup brown sugar
- 1 tablespoon baking powder
- 0.5 cup whipping cream
- 60 grams, softened butter
- 0.3333333333333333 cup sugar
- 1 egg
- 1 cup almond flour
- 1 tablespoon flour
- 1 handful sliced almonds
- 1 sprinkle sugar
- 1 scoop vanilla ice cream
Instructions
- Preheat the oven to 200 degrees Celsius.
- In a bowl, mix all the peach ingredients together and transfer to a greased mold. Bake in the oven for 15 minutes.
- For the cobbler: In a bowl, mix flour, sugar, baking powder, then add butter and mash well with a cutter. Add cream and integrate.
- For the frangipane: In a bowl, mix egg, sugar, vanilla, butter, then add flours and mix.
- Remove the peaches from the oven and layer the cobbler and frangipane mixtures on top, alternating between the two.
- Add sliced almonds and sugar on top.
- Place in the oven and reduce the temperature to 170 degrees Celsius. Bake for 40 minutes.
- Serve with vanilla ice cream.
