Japanese Crab Omelette

Ingredients

  • 1 cup chicken broth
  • 2 tbsp light soy sauce
  • 1 tsp rice vinegar
  • 1 tsp sake
  • 1 tsp sugar
  • 2 whole scallions
  • 1 to taste salt
  • 1 to taste pepper
  • 1.5 tbsp corn starch
  • 3 whole eggs
  • 0.5 cup imitation crab
  • 1 to taste salt
  • 1 to taste pepper
  • 1 tbsp butter or oil
  • 1 tsp sesame oil
  • 1 to serve rice
  • 1 to serve gravy
  • 1 to serve scallions

Instructions

  1. Make sauce by mixing together sauce ingredients and reducing in a pot over medium heat until it’s fully heated and the sauce has thickened, about 5 mins.
  2. Make omelette by mixing together eggs and imitation crab, seasoning with salt and pepper.
  3. Add 1 tbsp butter or oil to a hot pan over medium heat, then add omelette mixture.
  4. Gently push the edges of omelette inward until most of the egg has cooked- you can cover the pan with a lid to help steam if your omelette is thicker.
  5. Drizzle on 1 tsp of sesame oil and serve over rice + gravy + scallions.
