Broccoli Cheddar Orzo Soup
A hearty soup that combines broccoli, cheddar, and orzo, topped with crispy prosciutto. Perfect for a comforting meal.

Ingredients
- 1 cup potato
- 0.75 cup broccoli stems
- 2 cup broccoli florets
- 1 cup leek
- 4 cloves garlic
- 4 cups chicken or vegetable stock/broth
- 1 cups water
- 1 tbsp mustard powder
- 1 to taste salt
- 1 to taste pepper
- 1 tbsp olive oil
- 2 tbsp butter
- 1 cup dried orzo
- 8 oz sharp cheddar cheese
- 1 cup heavy cream
- 5 slices prosciutto
Instructions
- Chop 1 cup of potato into small pieces.
- Chop 3/4 cup of broccoli stems and 2 cups of broccoli florets.
- Chop 1 cup of leek (white and light green parts only).
- Mince 4 cloves of garlic.
- Prepare 4 cups of chicken or vegetable stock/broth and 1-2 cups of water.
- Measure 1 tbsp of mustard powder and season with salt and pepper.
- Heat 1 tbsp of olive oil and 2 tbsp of butter in a pan.
- Cook 1 cup of dried orzo according to package instructions.
- Grate 8 oz of sharp cheddar cheese (not pre-shredded).
- Measure 1 cup of heavy whipping cream.
- Prepare 5-7 slices of prosciutto.
