Berry Lemonade Spritzer

A chilled mocktail made by muddling part of the mixed berries with sugar, building a lemonade base with lemon juice and cold water, then finishing with chilled sparkling water and the remaining berries for texture. It is served over ice with lemon and berry garnish.

Berry Lemonade Spritzer

Ingredients

  • 160 g Mixed berries rinsed; halved if large strawberries are included
  • 25 g Granulated sugar divided
  • 120 ml Fresh lemon juice from about 4 to 5 lemons
  • 240 ml Cold water for the lemonade base
  • 25 g Granulated sugar divided
  • 480 ml Sparkling water chilled
  • 80 g Mixed berries rinsed; halved if large strawberries are included
  • 400 g Ice for serving
  • 8 slices Lemon slices for garnish

Instructions

  1. Add 160 g of the mixed berries to a pitcher with 25 g of the sugar. Muddle gently until the berries release juice but still have some texture. The berries look crushed and juicy, with a few intact pieces remaining.
  2. Stir in the lemon juice, cold water, and the remaining 25 g sugar until the sugar dissolves. The mixture looks uniform and the sugar is no longer gritty.
  3. Add the sparkling water and the remaining 80 g mixed berries. Stir once or twice just to combine without losing too much fizz. The drink is evenly mixed and still visibly sparkling.
  4. Fill each of the 4 glasses with 100 g ice, then divide the spritzer evenly among them, leaving a little headspace. Garnish each glass with 2 lemon slices. The glasses are cold, the drink is pale pink, and berries float throughout.
