Huevos Rancheros
A traditional Mexican breakfast dish featuring crispy tortillas topped with beans, eggs, salsas, and a variety of fresh toppings.

Ingredients

- 0.25 cup sour cream
- 1 lime wedges, for squeezing
- 0 pickled onions optional, for tangy crunch
- 0 radishes chopped, for extra freshness
- 0 bacon bits optional, for a meaty addition
- 0 hot sauce optional, if you like it spicy
Instructions
- Heat about 1 tablespoon of oil in a skillet over medium-high heat. Fry each tortilla for about 1-2 minutes on each side until crispy and golden brown. Transfer them to a paper towel-lined plate to drain excess oil. Sprinkle with a little salt while they’re hot for flavor.
- Heat a bit of oil in a skillet, crack the eggs, and cook them sunny-side up or over easy, depending on your preference.
- Season the eggs with salt and pepper.
- Heat the refried black beans in a small saucepan or microwave until they are hot and spreadable.
- Place the crispy tortillas on individual serving plates. Spread a layer of warm refried black beans on each tortilla. Place your cooked eggs on top of the beans (one egg per tortilla).
- Drizzle each tortilla with salsa roja on one side and salsa verde on the other, creating a colorful contrast. This two-salsa approach makes the dish visually appealing and adds flavor variety.
- Add a few slices or a dollop of mashed avocado, sprinkle crumbled queso fresco over the eggs, scatter fresh cilantro, and add jalapeño slices if desired. Top with a small dollop of sour cream and serve with lime wedges.
- Garnish with pickled onions, chopped radishes, or crispy bacon bits or chorizo if desired. Serve warm with a side of hot sauce for extra spice and lime wedges for a fresh finish.
