Cook time: 45 minutes

Servings: 4

Ingredients

  • 0.25 cup fresh orange juice
  • 2 tablespoons lime juice
  • 3 cloves garlic minced
  • 1 teaspoon ground cumin
  • 1 teaspoon dried oregano
  • 2 tablespoons olive oil
  • 0 salt to taste
  • 0 black pepper to taste
  • 0.5 lb pork shoulder or pork loin, boneless
  • 1 loaf Cuban bread French bread or ciabatta as substitute
  • 0 yellow mustard
  • 4 slices Swiss cheese
  • 0.25 lb ham thinly sliced, smoked or regular
  • 0.5 lb roast pork thinly sliced
  • 8 slices dill pickles or spicy pickles
  • 4 slices Swiss cheese
  • 0 butter for grilling

Instructions

  1. If you’re making roast pork from scratch, prepare the mojo marinade by whisking together the orange juice, lime juice, minced garlic, ground cumin, oregano, olive oil, and a pinch of salt and pepper in a small bowl.
  2. Marinate the pork shoulder or pork loin in this mixture for at least 1-2 hours or overnight, if possible.
  3. Roast the pork at 350°F (175°C) for 2-3 hours until tender, then slice it thinly for the sandwich. If using leftover roast pork or pre-cooked pork, you can skip this step and just warm it up.
  4. Slice the Cuban bread loaf horizontally to open it like a large sandwich roll. Spread a generous layer of yellow mustard on the inside of both halves of the bread.
  5. Start assembling the sandwich. First, place a layer of Swiss cheese on one side of the bread.
  6. Add a layer of thinly sliced ham on top of the cheese.
  7. Pile on the sliced roast pork. Be generous here for a juicy bite.
  8. Place sliced pickles over the pork. Use regular dill pickles, or for a twist, add spicy pickles for some heat.
  9. Top with another slice of Swiss cheese and close the sandwich.
  10. Heat a large skillet or sandwich press over medium heat. Spread butter on the outside of the sandwich and place it on the skillet or press.
  11. Grill the sandwich for 3-4 minutes on each side until the bread is crispy and the cheese is melted.
  12. Remove the sandwich from the skillet or press and slice it diagonally. Serve hot with a side of plantain chips or yuca fries for a classic Cuban vibe, or even with a light salad for balance.
