Speedy Pad Thai Noodle Salad
A quick and non-traditional version of Pad Thai turned into a noodle salad, with a perfect combination of sweet, sour, and salty flavors. You can swap chicken for any protein you like.

Ingredients
- 60 g dry rice noodles
- 1 heaped tsp peanut butter
- 1 tsp tamarind paste
- 1 tsp honey
- 1 tsp fish sauce
- 1 tsp sriracha
- 1 whole lime
- 1 tsp water
- 100 g cooked shredded chicken
- 2 whole spring onions
- 1 handful cherry tomatoes
- 1 whole carrot
- 1 handful coriander leaves
- 1 splash water
- 1 tbsp roasted peanuts
Instructions
- Soak the rice noodles according to pack instructions.
- Drain the soaked rice noodles.
- Whisk together the peanut butter, tamarind paste, honey, fish sauce, sriracha, lime zest and juice, and 1 tsp water until smooth.
- In a mixing bowl, combine the chicken, spring onions, tomatoes, carrot, and coriander.
- Toss the combined ingredients through the sauce until everything is well coated.
- Add the noodles to the mixing bowl, mixing again and loosening with a splash of water if needed.
- Serve the salad topped with the chopped peanuts.
