- 2.5 cups cherry tomatoes
- 5 cloves garlic minced
- 2 tbsp olive oil
- 1 tbsp honey
- 1 tsp salt
- 1 tsp pepper
- 2 sprigs fresh thyme
- 8 oz light cream cheese
- 200 grams light feta
- 0.25 cup water
- 2.5 tbsp honey
- 1 tsp pepper
- 0.5 tsp salt
- 0.5 whole lemon zested
Instructions
- Preheat the oven to 450°F (230°C). In an oven-safe dish, combine the cherry tomatoes, garlic, olive oil, honey, salt, pepper, cumin, and fresh thyme. Oven is preheated and the tomato mixture is assembled in the dish.
- Roast in the oven for 20 minutes, or until the tomatoes are blistered and slightly caramelized. Tomatoes are blistered and slightly caramelized.
- In a food processor, blender, or using a hand mixer, combine the cream cheese, feta, water, honey, pepper, salt, and lemon zest. Blend until smooth and creamy. Whipped feta is smooth and creamy.
- Spread the whipped feta onto a serving plate or bowl. Spoon the blistered tomatoes over the top, including any juices from the dish. Serve with crostini, crackers, or sliced baguette. Dip is assembled and ready to serve.
