Peach Shortbread with Sweetened Condensed Milk Sauce

Ingredients

  • 1 cup butter softened
  • 0.5 cup granulated sugar
  • 0.25 cup brown sugar
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 0.25 teaspoon salt
  • 2.5 items peach sliced
  • 0 cup butter
  • 0.5 cup sweetened condensed milk
  • 1 tablespoon vanilla extract
  • 0 cup heavy cream optional, for a thinner sauce

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9x9-inch baking pan or line it with parchment paper.
  2. In a large bowl, cream together the butter, granulated sugar, and brown sugar until light and fluffy.
  3. Add the vanilla extract and mix until combined.
  4. Gradually mix in the flour and salt until the dough just comes together. It should be slightly crumbly but hold its shape when pressed.
  5. Press about 2/3 of the dough into the prepared baking pan, smoothing it into an even layer.
  6. Layer the sliced peaches evenly over the shortbread base. You can overlap them slightly to cover the dough completely.
  7. Crumble the remaining 1/3 of the shortbread dough over the peaches. It’s okay if some peaches peek through.
  8. Bake the shortbread for 35-40 minutes, or until the top is lightly golden and the peaches are soft and bubbling. Remove from the oven and let it cool in the pan.
  9. In a small saucepan over medium heat, melt the butter.
  10. Stir in the sweetened condensed milk and vanilla extract, and heat until the mixture is warm and slightly thickened, about 2-3 minutes.
  11. For a thinner sauce, stir in heavy cream until the sauce reaches your desired consistency. Remove from heat and let it cool slightly.
  12. Once the shortbread has cooled slightly, cut it into squares or bars. Drizzle the warm sweetened condensed milk sauce over each piece right before serving.
