Apple Cinnamon Sparkler
A no-cook sparkling mocktail that blends apple juice with a small cinnamon syrup, lemon juice, and sparkling water. It is served cold over ice so the apple flavor stays bright and the carbonation stays lively.

Ingredients
- 60 ml water
- 25 g granulated sugar
- 1 g ground cinnamon
- 480 ml apple juice chilled
- 15 ml lemon juice freshly squeezed
- 0.2 g salt fine
- 480 ml sparkling water well chilled
- 300 g ice
- 80 g apple slices thinly sliced, for garnish
- 4 each cinnamon stick for garnish
Instructions
- Make a quick cinnamon syrup: in a small saucepan, combine the water, granulated sugar, and ground cinnamon. Set over medium heat and stir until the sugar dissolves, about 2 to 3 minutes; do not boil hard. The liquid looks uniform and the sugar is fully dissolved.
- Remove the saucepan from the heat and let the syrup stand for 2 minutes. Strain it through a fine-mesh strainer into a pitcher, pressing lightly on the solids if needed. The pitcher contains a smooth cinnamon syrup with no visible spice sediment.
- Add the chilled apple juice, lemon juice, and salt, if using, to the pitcher. Stir to combine. The mixture is evenly blended and lightly aromatic.
- Just before serving, add the sparkling water and stir gently once or twice to preserve carbonation. The drink looks fizzy and the bubbles are still active.
- Fill 4 tall glasses with ice, divide the sparkler among them, and garnish with apple slices and cinnamon sticks if using. The glasses are cold, fizzy, and ready to drink immediately.
