Spicy Garlic Shrimp and Broccoli
A quick side of shrimp and broccoli cooked in one skillet with garlic, red pepper flakes, and lemon. The broccoli is blanched briefly, then tossed with the shrimp so the vegetables stay crisp-tender and the shrimp stay juicy.

Ingredients
- 750 ml water for blanching the broccoli
- 3 g kosher salt divided
- 450 g broccoli florets cut into bite-size florets
- 450 g raw shrimp, peeled and deveined tails removed if desired
- 3 g kosher salt divided
- 1 g black pepper freshly ground
- 30 ml olive oil
- 15 g unsalted butter
- 4 clove garlic cloves finely minced
- 2 g red pepper flakes
- 1 whole lemon zested if desired, then juiced
- 10 g fresh parsley chopped
Instructions
- Bring the water and 3 g of the salt to a boil in the medium pot. Add the broccoli and blanch for 2 minutes, then drain well. The broccoli should turn bright green and be just starting to soften. Broccoli is bright green and still crisp-tender; the pot has been drained.
- Pat the shrimp dry and season them with the remaining 3 g salt and the black pepper. Shrimp are lightly seasoned and dry on the surface.
- Heat the olive oil and butter in the skillet over medium-high heat. Add the garlic and red pepper flakes and cook for 20 to 30 seconds, just until fragrant; do not let the garlic brown. Garlic is fragrant but still pale.
- Add the shrimp in a single layer and cook for 1 to 2 minutes per side, until opaque and just curled. If the skillet is crowded, turn the shrimp once and cook in two quick batches using the same skillet contents. Shrimp are pink, opaque, and curled into a loose C shape.
- Add the drained broccoli to the skillet and toss for 2 to 3 minutes until heated through and coated in the garlic oil. Add the lemon juice, then taste and adjust with more salt only if needed from the same measured salt total. Broccoli is hot and glossy; the sauce tastes bright and savory.
- Transfer to a serving dish and finish with the parsley if using. Serve immediately as a side. Dish is ready to serve while hot.
