Ginger Lemonade with Mint
A chilled lemonade made by steeping sliced ginger in hot water, then mixing it with lemon juice, sugar, cold water, and mint. The mint is used as a brief infusion and a garnish, while the finished drink is strained over ice for a clear, bright beverage with a mild ginger heat and fresh herbal finish.

Ingredients
- 250 ml water for infusing the ginger
- 20 g fresh ginger peeled and thinly sliced
- 35 g granulated sugar none
- 5 g fresh mint leaves lightly bruised, divided for infusion and garnish
- 90 ml lemon juice freshly squeezed
- 350 ml cold water none
- 3 g fresh mint leaves lightly bruised, divided for infusion and garnish
- 240 g ice for serving
Instructions
- Combine 250 ml water and 20 g sliced ginger in a small saucepan. Bring just to a simmer over medium heat, then remove from the heat and steep for 5 minutes. The liquid smells strongly of ginger and the slices look slightly faded.
- Stir 35 g sugar into the warm ginger infusion until dissolved. Add 5 g of the mint leaves, steep for 1 minute, then strain the liquid into a pitcher. Stir in 90 ml lemon juice and 350 ml cold water. The pitcher tastes balanced, tart, and lightly sweet with no visible sugar crystals or mint pieces.
- Lightly bruise the remaining 3 g mint leaves and use them as garnish in the glasses. Divide 240 g ice between 2 glasses and pour the lemonade over the ice. The drink is cold, aromatic, and clear, with mint visible only as a garnish.
