Citrus Mint Sparkler

Servings: 4

Ingredients

  • 30 ml Honey syrup equal parts honey and warm water, cooled
  • 240 ml Orange juice, freshly squeezed strained if desired
  • 60 ml Lemon juice, freshly squeezed strained
  • 30 ml Lime juice, freshly squeezed strained
  • 8 g Fresh mint leaves plus extra sprigs for garnish
  • 480 ml Sparkling water, well chilled
  • 600 g Ice for serving
  • 4 g Fresh mint leaves plus extra sprigs for garnish
  • 8 piece Orange slices for garnish
  • 4 piece Lime slices for garnish

Instructions

  1. If making your own honey syrup, stir 15 ml honey with 15 ml warm water until smooth, then cool it. Chill the sparkling water and glasses if possible. Honey is fully dissolved and the sparkling water is cold.
  2. In a pitcher, combine the orange juice, lemon juice, lime juice, honey syrup, and 8 g of the mint leaves. Lightly muddle or press the mint just enough to bruise it without shredding it. The mint is fragrant and the liquid is evenly mixed.
  3. Add the sparkling water and stir once or twice gently to preserve the bubbles. The drink looks evenly blended and still effervescent.
  4. Fill 4 glasses with 150 g ice each, then divide the drink among them. Top each glass with a little of the remaining mint and optional citrus slices. The glasses are cold, sparkling, and garnished.
