Pumpkin Banana Cake
A baked pumpkin banana cake with warm spice and walnuts.

Ingredients
- 2 whole bananas ripe, mashed
- 1 cup pumpkin puree
- 0.5 cup coconut sugar
- 0.3333333333 cup coconut oil melted
- 0.25 cup maple syrup
- 1 tsp vanilla extract
- 2 cup all-purpose flour
- 1 tsp baking soda
- 0.5 tsp baking powder
- 0.5 tsp salt
- 2 tsp pumpkin pie spice
- 0.5 cup walnuts chopped
Instructions
- Preheat the oven to 350°F and grease a 9-inch round cake pan. Oven is preheated and pan is prepared.
- In a large bowl, mash the bananas, then whisk in the pumpkin puree, coconut sugar, melted coconut oil, maple syrup, and vanilla extract. Wet mixture is smooth and combined.
- Add the flour, baking soda, baking powder, salt, and pumpkin pie spice; stir until just combined. Fold in the walnuts if using. Batter is just combined.
- Pour the batter into the prepared pan and smooth the top. Batter is evenly spread in the pan.
- Bake for 32-36 minutes, until a toothpick inserted in the center comes out clean. A toothpick comes out clean.
- Cool in the pan for 10 minutes, then turn out onto a rack to cool completely. Cake is fully cooled.
