Miso Peanut Ramen Bowls
Ramen bowls with a creamy miso-peanut broth, carrots, spinach, and soft-boiled eggs.

Ingredients
- 4 cup broth chicken or vegetable
- 3 tbsp white miso paste
- 0.3333333333 cup creamy peanut butter
- 2 tbsp soy sauce
- 1 tbsp toasted sesame oil
- 1 tbsp brown sugar
- 2 whole garlic minced
- 1 tbsp fresh ginger grated
- 1 cup shredded carrots
- 4 pack instant ramen noodles seasoning packets discarded
- 2 cup baby spinach
- 4 whole soft-boiled eggs
Instructions
- In a large pot over medium heat, whisk together the broth, miso paste, peanut butter, soy sauce, sesame oil, brown sugar, garlic, and ginger until smooth. Mixture is smooth.
- Bring to a gentle simmer, add the carrots, and cook for 3 to 4 minutes. Carrots are tender-crisp.
- Add the ramen noodles and cook according to package directions, about 3 minutes. Noodles are cooked.
- Stir in the baby spinach until wilted. Spinach is wilted.
- Divide among bowls and top with a soft-boiled egg. Bowls are assembled.
