Cheesy Beef Rigatoni
This is a delicious, satisfying and really easy to make cheesy beef rigatoni. It is a high protein, tasty dinner idea.

Ingredients
- 1 tbsp olive oil
- 1 whole onion
- 3 cloves garlic cloves
- 400 g lean beef mince
- 1 tsp paprika
- 0.5 tsp chilli flakes
- 30 g reduced fat Sundried tomato pesto
- 1 whole red pepper
- 1 whole carrot
- 1 can chopped tomatoes
- 0.5 can water
- 1 tbsp tomato paste
- 1 tsp sugar
- 3 drops Worcestershire sauce
- 1 cube beef stock cube
- 240 g uncooked pasta
- 100 ml pasta water
- 100 g reduced fat mozzarella ball
- 1 bunch fresh parsley
- 4 tbsp Parmesan
Instructions
- Add oil to a pan on medium heat. Add the garlic and onion and cook for a few minutes to soften them.
- Add in the mince, break it down and cook until browned. Mix in the paprika, chilli flakes and reduced fat sundried tomato pesto.
- Mix in the pepper and carrot. Fry for a few minutes until softened.
- Add in the chopped tomatoes, water, tomato paste, sugar, Worcestershire sauce, and beef stock cube. Let it come to a boil then reduce the heat to simmer for 5-10 minutes.
- Cook pasta for 8-10 minutes until al dente. Save some pasta water.
- Then add the cooked pasta and some pasta water (about 100mls). Mix well.
- Break up the mozzarella and add it to the pan. Mix through to let it melt.
- Serve the rigatoni into 4 portions and top with fresh parsley and a tablespoon of Parmesan per portion.
