Grilled Corn & Avocado Salad with Lime Vinaigrette

Grilled Corn & Avocado Salad with Lime Vinaigrette

Ingredients

  • 4 ears corn husked
  • 0.25 cup olive oil
  • 0 salt to taste
  • 0 black pepper to taste
  • 2 avocado diced
  • 1 pint cherry tomatoes halved
  • 1 small red onion finely chopped
  • 0.25 cup cilantro fresh, chopped
  • 1 jalapeño seeded and minced (optional)
  • 0.25 cup olive oil
  • 2 lime juice and zest
  • 1 tablespoon honey
  • 1 clove garlic minced
  • 0 salt to taste
  • 0 black pepper to taste
  • 0.25 cup feta cheese crumbled (optional)

Instructions

  1. Preheat your grill to medium-high heat. Brush the corn with a little olive oil and season with salt and pepper. Place the corn directly on the grill and cook for about 10 minutes, turning occasionally, until the corn is charred in spots and tender. Remove the corn from the grill and let it cool slightly, then cut the kernels off the cob and place them in a large mixing bowl.
  2. Add the diced avocados, halved cherry tomatoes, chopped red onion, cilantro, and jalapeño (if using) to the bowl with the grilled corn. Gently toss to combine.
  3. In a small bowl, whisk together the olive oil, lime juice and zest, honey, minced garlic, and a pinch of salt and pepper. Taste and adjust seasoning as needed.
  4. Pour the lime vinaigrette over the salad and toss gently to coat all the ingredients.
  5. Optional: Sprinkle with crumbled feta cheese for a tangy contrast.
  6. Serve the salad immediately or chill it in the fridge for 15-20 minutes before serving. Enjoy!
