Honey Lemon Ginger Tea
A simple brewed tea made by simmering ginger in water, then stirring in lemon juice and honey. It serves as a hot drink with a clean citrus finish and a warming ginger note.

Ingredients
- 900 ml Water divided
- 30 g Fresh ginger peeled, thinly sliced
- 100 ml Water divided
- 60 ml Lemon juice freshly squeezed
- 60 g Honey plus more to taste, if desired
Instructions
- Add 900 ml water and the sliced ginger to a medium saucepan. Bring to a simmer over medium heat, then reduce to low and simmer gently for 10 minutes. The liquid smells strongly of ginger and has a light golden tint.
- Remove the pan from the heat. Stir in the remaining 100 ml water, the lemon juice, and the honey until dissolved. The honey is fully dissolved and the tea tastes balanced, hot, and aromatic.
- Strain into 4 mugs. Serve hot. Each mug is clear of ginger pieces and served steaming.
