Cook time: 60 minutes

Servings: 4

Ingredients

  • 0.3333333333333333 cup olive oil
  • 2 tablespoon harissa paste
  • 0.25 cup lemon juice
  • 1.5 teaspoon onion powder
  • 2 cloves garlic
  • 1 teaspoon kosher salt
  • 2 lbs boneless skinless chicken thighs
  • 0.25 cup olive oil
  • 3 tablespoon harissa paste
  • 2 tablespoon honey
  • 0.25 cup lemon juice
  • 3 cloves garlic
  • 1 teaspoon kosher salt
  • 0.5 teaspoon black pepper
  • 1 as needed avocado oil spray
  • 1 as needed parsley
  • 1 as needed pickled onions

Instructions

  1. In a blender, add all of the ingredients for the harissa sauce.
  2. Blend the sauce ingredients until smooth, and set aside.
  3. Pat chicken dry and add to a large bowl.
  4. Add all of the ingredients listed above to the chicken and toss to coat well.
  5. Cover the bowl and let the chicken marinate for at least 30 minutes.
  6. Turn grill on to 500F.
  7. Spray grill grates with avocado oil spray.
  8. Once the grill has reached 500F, add the chicken. Do not touch for 7 minutes.
  9. Then flip to the other side and do not touch for 6-7 minutes more, or until the internal temperature reaches 165F.
  10. Let the chicken rest for 5 minutes, then pour 1/2 of the sauce on top, garnish with parsley and pickled onions.
  11. Serve with remaining sauce on the side.
  12. If using your oven, preheat oven to 400F. Line a baking sheet with parchment paper. Add chicken, then bake for 15 minutes.
  13. Flip to the other side and bake for 13-15 minutes more.
  14. To get that crispy brown top, broil for 2 minutes at the end.
