Herby Turkey Burgers With No Mayo Slaw

Ingredients

  • 1 pound ground turkey
  • 2 tablespoons fresh parsley
  • 1 tablespoon chives
  • 1 garlic clove
  • 1 tablespoon Dijon mustard
  • 1 teaspoon onion powder
  • 1 teaspoon kosher salt
  • 0.25 teaspoon black pepper
  • 1 pinch chili flakes
  • 2 cups green cabbage
  • 0.25 cup fresh parsley or cilantro
  • 2 tablespoons chives
  • 1 tablespoon olive oil
  • 1 tablespoon fresh lemon juice or apple cider vinegar
  • 1 to taste salt and pepper
  • 4 gluten-free buns
  • 1 few rings pickled red onion
  • 1 avocado
  • 1 handful leafy greens
  • 1 to taste dairy-free mayo or mustard

Instructions

  1. In a bowl, combine ground turkey with herbs, garlic, mustard, onion powder, salt, pepper, and chili flakes if using. Mix gently until just combined. Divide and shape into 4 equal patties. Place in the fridge while you prep the slaw.
  2. In a large bowl, toss cabbage with chopped herbs, olive oil, and lemon juice. Season with salt and pepper. Let it sit to slightly soften while the burgers cook.
  3. Preheat grill, grill pan, or nonstick skillet over medium-high heat. Lightly oil grates or pan. Grill burgers for 5–6 minutes per side, or until internal temp reaches 165°F and they’re nicely browned. Let rest for a few minutes before serving.
  4. Toast buns if desired. Spread with mayo or mustard. Add turkey patty, a mound of slaw, a few pickled onion rings, and avocado or greens if using. Serve immediately.
