Sweet Potato Quesadilla with Lemon Yogurt and Harissa

Ingredients
- 2 sweet potatoes leave skin on
- 0.5 tsp garlic granules
- 0.5 tsp onion granules
- 0.5 tsp mixed herbs
- 0.5 tsp harissa
- 0 salt pinch
- 0 grated cheese (red leicester and mozzarella) small handful
- 0 fresh coriander chopped
- 2 tortillas
- 2 tbsp lemon yogurt with squeeze of fresh juice and pinch of salt
- 0 harissa to taste
- 0 fresh coriander chopped
- 1 lemon cut into slices
Instructions
- Place 2 sweet potatoes in a bowl and microwave for 8 minutes until soft. (Leave skin on for extra goodness)
- Mash the sweet potatoes, then add 1/2 tsp garlic granules, 1/2 tsp onion granules, 1/2 tsp mixed herbs, 1/2 tsp harissa, a pinch of salt, a small handful of grated cheese (red leicester and mozzarella), and fresh coriander.
- Press the sweet potato mixture flat onto one tortilla, then top with the second tortilla.
- Heat oil in a pan and cook the quesadilla on both sides until golden (roughly 1-2 minutes each side).
- Cut the quesadilla into 6 slices, then top with lemon yogurt, harissa, and fresh coriander. Serve with a slice of fresh lemon.
