Slow Cooker Harissa Sausage Penne

Ingredients
- 6 Porky Lights Premium Pork Sausages (50% Less Fat)
- 1 Onion, Diced
- 3 Garlic Cloves, Minced
- 2 Tbsp Harissa Paste
- 200 g Roasted Red Peppers, Chopped
- 400 g Chopped Tomatoes
- 1 Tbsp Tomato Puree
- 1 Tsp Smoked Paprika
- 1 Pinch Dried Chilli Flakes
- 250 g Penne Pasta, Dried
- 50 g Cheddar Cheese, Reduced Fat
- 1 Bunch Parsley, Fresh
- 4 Reduced Fat Garlic Bread Slices
Instructions
- Remove the skins from the sausages. Fry in a pan, breaking them up with a wooden spoon until browned, then transfer to the slow cooker.
- Add the onion, garlic, harissa paste, roasted red peppers, chopped tomatoes, tomato purée, smoked paprika, and chilli flakes. Stir well to combine.
- Cover and cook on high for 2–3 hours or low for 4–5 hours, until the sausages are fully cooked and the sauce is thick and fragrant.
- Meanwhile, cook the Penne Pasta according to packet instructions, drain and set aside.
- Once the sauce is ready, stir the cooked Penne Pasta through until evenly coated.
- Stir in the Reduced Fat Cheddar until melted and creamy.
- Garnish with Fresh Parsley and serve with Reduced Fat Garlic Bread Slices on the side.
