Slow Cooker Harissa Sausage Penne

Ingredients

  • 6 Porky Lights Premium Pork Sausages (50% Less Fat)
  • 1 Onion, Diced
  • 3 Garlic Cloves, Minced
  • 2 Tbsp Harissa Paste
  • 200 g Roasted Red Peppers, Chopped
  • 400 g Chopped Tomatoes
  • 1 Tbsp Tomato Puree
  • 1 Tsp Smoked Paprika
  • 1 Pinch Dried Chilli Flakes
  • 250 g Penne Pasta, Dried
  • 50 g Cheddar Cheese, Reduced Fat
  • 1 Bunch Parsley, Fresh
  • 4 Reduced Fat Garlic Bread Slices

Instructions

  1. Remove the skins from the sausages. Fry in a pan, breaking them up with a wooden spoon until browned, then transfer to the slow cooker.
  2. Add the onion, garlic, harissa paste, roasted red peppers, chopped tomatoes, tomato purée, smoked paprika, and chilli flakes. Stir well to combine.
  3. Cover and cook on high for 2–3 hours or low for 4–5 hours, until the sausages are fully cooked and the sauce is thick and fragrant.
  4. Meanwhile, cook the Penne Pasta according to packet instructions, drain and set aside.
  5. Once the sauce is ready, stir the cooked Penne Pasta through until evenly coated.
  6. Stir in the Reduced Fat Cheddar until melted and creamy.
  7. Garnish with Fresh Parsley and serve with Reduced Fat Garlic Bread Slices on the side.
