Hot Chocolate with Marshmallows
A stovetop hot chocolate made with milk, cocoa powder, sugar, and vanilla, then finished with marshmallows and a light cocoa dusting. The drink is smooth and warm, with a straightforward chocolate profile and a soft top from the marshmallows.

Ingredients
- 960 ml whole milk none
- 60 ml water none
- 30 g unsweetened cocoa powder sifted if lumpy
- 40 g granulated sugar none
- 1 g fine salt none
- 5 ml vanilla extract none
- 60 g mini marshmallows for topping
- 2 g unsweetened cocoa powder for garnish
Instructions
- Set a medium saucepan over medium heat. Add the milk, water, cocoa powder, sugar, and salt. Whisk continuously until the cocoa is fully dissolved and the mixture is steaming, 4 to 6 minutes. The drink is smooth with no visible cocoa lumps and small steam rises from the surface.
- Lower the heat and continue to whisk for 1 to 2 minutes without letting it boil. Stir in the vanilla extract. The hot chocolate is steaming hot and aromatic, with no scalded milk smell.
- Divide the hot chocolate between 4 mugs. Top each mug with an equal portion of marshmallows. Each mug is filled and the marshmallows begin to soften on contact.
- If using the optional cocoa dusting, lightly sift it over the marshmallows and serve immediately. A thin cocoa layer is visible on top and the marshmallows remain buoyant.
