Coconut Lime Mocktail

A chilled nonalcoholic drink with coconut water, lime juice, mint, and a small sparkling finish served over ice. The glass size is adjusted so each serving fits comfortably without overflow.

Coconut Lime Mocktail

Ingredients

  • 16 g fresh mint leaves lightly bruised
  • 400 g ice cubes for serving
  • 720 ml coconut water chilled
  • 120 ml fresh lime juice strained
  • 240 ml cold sparkling water chilled
  • 1 each lime cut into 4 wedges

Instructions

  1. Divide the mint leaves between the 4 serving glasses and bruise them lightly with the back of a spoon to release aroma. The mint smells fragrant and looks slightly crushed.
  2. Add 100 g ice cubes to each glass. Each glass is about half to two-thirds full with ice and still has room for liquid.
  3. In a measuring jug, combine the coconut water and lime juice, then stir in the sparkling water gently to keep some fizz. The drink looks evenly mixed with a light sparkle.
  4. Pour 250 ml of the mixture into each glass over the ice. Each glass is filled with a chilled, pale tropical drink and does not overflow.
  5. Garnish each glass with 1 lime wedge and serve immediately. The lime wedges are perched on the rim and the drink is cold.
