Lemon Dill Baked Cod with Roasted Potatoes

Lemon Dill Baked Cod with Roasted Potatoes

Ingredients

  • 680 g baby potatoes halved
  • 20 ml olive oil divided
  • 4 g kosher salt divided
  • 1 g black pepper divided
  • 1.5 g garlic powder
  • 680 g cod fillets patted dry
  • 1 each lemon 1 zested and both juiced
  • 10 ml olive oil divided
  • 4 g kosher salt divided
  • 1 g black pepper divided
  • 1.5 g garlic powder
  • 10 g fresh dill chopped, divided
  • 300 g green peas frozen, thawed
  • 5 g fresh dill chopped, divided
  • 1 each lemon 1 zested and both juiced

Instructions

  1. Heat the oven to 230°C. Line 2 rimmed baking sheets with parchment paper. Oven is fully preheated and sheets are lined.
  2. Put the halved potatoes in a large bowl with 20 ml olive oil, 4 g salt, 1 g black pepper, and 1.5 g garlic powder. Toss until evenly coated, then spread them cut-side down on one baking sheet. Potatoes are coated and in a single layer.
  3. Roast the potatoes for 10 minutes so the cut sides start browning. Potatoes are beginning to turn golden at the edges.
  4. While the potatoes roast, mix the cod with the lemon zest, lemon juice from 1 lemon, 10 ml olive oil, the remaining 4 g salt, 1 g black pepper, the remaining 1.5 g garlic powder, and 10 g of the dill. Place the cod on the second baking sheet. Cod is seasoned and ready for the oven.
  5. After the potatoes have roasted 10 minutes, add the cod sheet to the oven and continue roasting both sheets for 9 to 10 minutes, until the cod flakes easily and the potatoes are tender with browned edges. Cod flakes at the center and potatoes are crisp-tender.
  6. During the last 2 minutes of roasting, warm the peas in a small saucepan with 2 to 3 tablespoons water, or place them on the potato sheet if space allows. Stir in the remaining dill and enough of the juice from the second lemon to lightly season them. Peas are hot and bright green.
