Ingredients
- 1.5 lb Yukon Gold potatoes
- 5 tbsp unsalted butter
- 2 cloves garlic minced
- 0.3333333333 cup heavy cream
- 0.25 cup whole milk
- 0.75 tsp kosher salt
- 0.25 tsp black pepper
- 2 tbsp sour cream
Instructions
- Boil the potatoes in generously salted water for 15–20 minutes until fork tender. Drain and return them to the hot pot for 1–2 minutes to remove excess moisture. Potatoes are fork tender and dried in the hot pot.
- Brown the butter over medium heat for 4–6 minutes until golden and nutty. Reserve about 1 tbsp for finishing. Add the garlic and cook for 30 seconds. Butter is golden and nutty, and garlic has cooked briefly.
- Stir in the cream, milk, salt, and pepper and warm over low heat. Mixture is warmed through.
- Mash the potatoes, then slowly fold in the warm brown butter mixture. Finish with the sour cream and drizzle the reserved brown butter over the top. Potatoes are creamy and fully combined.
