Sweet Dijon Brussels Sprouts

Ingredients
- 1.5 pounds Brussels sprouts trimmed and halved
- 2 tbsp olive oil
- 0 salt to taste
- 0 pepper to taste
- 1.5 pounds Brussels sprouts roasted
- 2 tbsp Dijon mustard
- 2 tbsp honey
- 1 tbsp balsamic vinegar
- 1 clove garlic minced
- 1 tsp lemon juice optional, for extra brightness
- 1 pinch red pepper flakes optional, for a bit of heat
- 1.5 pounds Brussels sprouts roasted
- 2 tbsp Dijon mustard
- 2 tbsp honey
- 1 tbsp balsamic vinegar
- 1 clove garlic minced
- 1 tsp lemon juice optional, for extra brightness
- 1 pinch red pepper flakes optional, for a bit of heat
Instructions
- Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or foil for easy cleanup.
- In a large bowl, toss the halved Brussels sprouts with olive oil, salt, and pepper until evenly coated.
- Spread the Brussels sprouts in a single layer on the prepared baking sheet, cut side down for maximum caramelization. Roast for 20-25 minutes, or until the Brussels sprouts are golden brown and crispy on the edges. Stir them halfway through cooking for even browning.
- While the Brussels sprouts are roasting, prepare the Sweet Dijon Glaze. In a small bowl, whisk together the Dijon mustard, honey or maple syrup, balsamic vinegar, minced garlic, lemon juice (if using), and red pepper flakes (if using). Taste and adjust the seasoning if needed.
- Once the Brussels sprouts are roasted, transfer them to a large serving bowl. Pour the sweet Dijon glaze over the hot Brussels sprouts and toss to coat them evenly. Serve immediately as a side dish.
