Sausage Gnocchi Soup
This sausage gnocchi soup is one of my favorite soups to make for my family every fall/winter season.

Ingredients
- 1 lb mild Italian sausage
- 1 whole yellow onion
- 1 tbsp minced garlic
- 2 cups chicken broth
- 2 cups heavy cream
- 3 oz grated Parmesan cheese
- 1 tsp salt
- 1 tsp pepper
- 1 tsp Italian seasoning
- 1 tsp oregano
- 1 tsp parsley
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp crushed red peppers
- 1 package dry gnocchi
- 1 tbsp tomato paste
- 1 bag spinach
Instructions
- In a large pot, cook 1 lb of mild Italian sausage over medium heat until browned.
- Dice 1 yellow onion and add it to the pot. Cook until the onion is translucent.
- Add 1-2 tbsp of minced garlic to the pot and stir until fragrant.
- Pour in 2 cups of chicken broth and 2 cups of heavy cream. Stir to combine.
- Add 3 oz of grated Parmesan cheese to the pot. Stir until the cheese is melted and incorporated.
- Season the soup with 1 tsp each of salt, pepper, Italian seasoning, oregano, parsley, garlic & onion powder, and crushed red peppers.
- Add 1 package of dry gnocchi to the pot. Cook until the gnocchi is tender.
- Stir in 1 tbsp of tomato paste until well combined.
- Add 1 bag of spinach to the pot. Cook until the spinach is wilted.
- Serve the soup hot, garnished with extra grated Parmesan cheese if desired.
