Chipotle Cheddar Chicken Rolled Tacos
Perfect for a quick weeknight dinner, these come together fast, thanks to just a handful of simple ingredients — rotisserie chicken, jarred salsa, greek yogurt, shredded cheese, and carb balance tortillas.

Ingredients
- 2 cups cooked chicken breasts, shredded
- 0.5 cup jarred salsa
- 0.25 cup plain greek yogurt or sour cream
- 0.5 tsp chipotle powder
- 0.25 cup chicken mixture
- 7 carb balance tortillas or regular flour tortillas
- 1 spray olive or avocado oil
- 1 bunch chopped cilantro
- 1 bowl pico de gallo
- 1 bowl cilantro ranch
- 1 bowl guacamole
- 1 cup greek yogurt or sour cream
- 0.5 cup fresh cilantro leaves
- 2 cloves garlic
- 2 tbsp fresh lime juice or lemon
- 2 tbsp olive oil
- 1 tsp onion powder
- 0.5 tsp salt
- 0.25 tsp black pepper
- 2 tbsp water or milk
- 1 tbsp chopped chives or dill
Instructions
- In a medium pan over low heat, combine chicken, salsa, greek yogurt or sour cream, and chipotle powder. Stir to combine and set aside.
- Add 1/4 cup chicken mixture to the center of each tortilla. Fold two edges inward and then roll up.
- Spray each taco with olive or avocado oil (be sure not to use a spray with propellants) and air fry at 390F for 8-10 minutes, or until crispy.
- Serve with chopped cilantro, pico de gallo, and cilantro ranch, and/or guacamole.
- For the cilantro ranch: add all ingredients to a blender and blend until smooth.
