Baked Feta And Butternut Squash Pasta
A delicious remake of the viral baked feta pasta, this version is made with butternut squash, sage, hot honey and garlic. It's a perfect dish to welcome the fall season.

Ingredients
- 5 cups butternut squash
- 0.25 cup olive oil
- 0.5 tsp salt
- 1 pinch red pepper flakes
- 8 oz feta cheese
- 1 lb gnocchi sardi pasta or orzo
- 10 leaves sage leaves
- 3 cloves garlic cloves
- 1 tbsp hot honey
- 0 to taste salt
- 0 to taste pepper
Instructions
- Preheat your oven to 400 degrees Fahrenheit.
- Peel and cut the butternut squash into cubes, aiming for a total of 5 cups.
- Place the cubed butternut squash on a baking sheet. Drizzle with olive oil and sprinkle with two hefty pinches of salt and a pinch of red pepper flakes.
- Place a block of feta cheese in the center of the baking sheet.
- Bake in the preheated oven for about 15-20 minutes, or until the butternut squash is tender and the feta cheese is golden brown.
- While the squash and feta are baking, cook 1 lb of gnocchi sardi pasta or orzo as per the package instructions.
- Finely mince 10 sage leaves and 3 garlic cloves.
- Once the squash and feta are done baking, remove from the oven and immediately drizzle with 1 tbsp of hot honey. Add the minced sage and garlic. Stir to combine.
- Drain the cooked pasta and add it to the baking sheet. Toss everything together until well combined. Season with additional salt and pepper to taste.
- Serve the pasta hot, garnished with additional sage leaves if desired.
