Miso-Glazed Salmon with Sesame Soba Noodles

Miso-Glazed Salmon with Sesame Soba Noodles

Ingredients

  • 2 tablespoons white miso paste
  • 2 tablespoons soy sauce
  • 1 tablespoon honey
  • 1 tablespoon rice vinegar
  • 1 tablespoon sesame oil
  • 1 clove garlic minced
  • 4 fillets salmon fillets
  • 0 parchment paper
  • 8 oz soba noodles
  • 2 tablespoons sesame oil
  • 1 tablespoon soy sauce
  • 1 tablespoon rice vinegar
  • 1 tablespoon sesame seeds
  • 2 units green onions thinly sliced
  • 0.5 units cucumber julienned
  • 1 unit small carrot julienned
  • 0 sesame seeds for garnish
  • 0 green onions for garnish

Instructions

  1. In a small bowl, mix miso paste, soy sauce, honey, rice vinegar, sesame oil, and minced garlic until smooth.
  2. Brush the salmon fillets with the miso glaze and let them marinate for 15-20 minutes.
  3. Preheat the oven to 400°F (200°C). Place the marinated salmon on a baking sheet lined with parchment paper. Bake for 12-15 minutes, or until the salmon is cooked through and caramelized on top.
  4. While the salmon is baking, cook soba noodles according to package instructions. Drain and rinse under cold water.
  5. In a large bowl, toss the cooked soba noodles with sesame oil, soy sauce, rice vinegar, sesame seeds, green onions, cucumber, and carrot.
  6. Serve the miso-glazed salmon over a bed of sesame soba noodles. Garnish with extra sesame seeds and green onions. Enjoy!
