Grilled Peach and Burrata Salad with Balsamic Glaze

Ingredients

  • 0.5 cup balsamic vinegar
  • 1 tablespoon honey
  • 4 whole peach halved and pitted
  • 1 tablespoon olive oil
  • 4 cups arugula
  • 8 oz burrata cheese torn into pieces
  • 0.25 cup basil torn
  • 0.25 cup pine nuts toasted
  • 0 balsamic glaze prepared
  • 0 salt to taste
  • 0 black pepper to taste

Instructions

  1. In a small saucepan, combine balsamic vinegar and honey. Bring to a simmer over medium heat and cook until reduced by half and syrupy, about 10-15 minutes. Set aside to cool.
  2. Preheat a grill or grill pan over medium-high heat. Brush peach halves with olive oil and grill, cut side down, for 3-4 minutes until charred and slightly softened. Remove from the grill and let cool slightly. Slice each half into wedges.
  3. In a large serving platter or bowl, arrange arugula. Top with grilled peach wedges, torn burrata, fresh basil leaves, and toasted pine nuts.
  4. Drizzle the salad with balsamic glaze and season with salt and pepper. Serve immediately and enjoy the sweet, creamy, and tangy flavors!
