Grilled Peach and Burrata Salad with Balsamic Glaze

Ingredients
- 0.5 cup balsamic vinegar
- 1 tablespoon honey
- 4 whole peach halved and pitted
- 1 tablespoon olive oil
- 4 cups arugula
- 8 oz burrata cheese torn into pieces
- 0.25 cup basil torn
- 0.25 cup pine nuts toasted
- 0 balsamic glaze prepared
- 0 salt to taste
- 0 black pepper to taste
Instructions
- In a small saucepan, combine balsamic vinegar and honey. Bring to a simmer over medium heat and cook until reduced by half and syrupy, about 10-15 minutes. Set aside to cool.
- Preheat a grill or grill pan over medium-high heat. Brush peach halves with olive oil and grill, cut side down, for 3-4 minutes until charred and slightly softened. Remove from the grill and let cool slightly. Slice each half into wedges.
- In a large serving platter or bowl, arrange arugula. Top with grilled peach wedges, torn burrata, fresh basil leaves, and toasted pine nuts.
- Drizzle the salad with balsamic glaze and season with salt and pepper. Serve immediately and enjoy the sweet, creamy, and tangy flavors!
