Lasagna Soup
This Lasagna Soup was so cozy and warm, perfect for the cooler nights! You probably have most of the ingredients in your pantry!

Ingredients
- 1 tbsp cooking oil
- 0.5 onion
- 1 tbsp garlic
- 0.25 veggies
- 0.5 lb ground pork
- 0.5 lb ground beef
- 1 tbsp tomato paste
- 1 cup marinara sauce
- 0.25 cup cooking red wine
- 1 cup beef broth
- 1 tsp dried oregano
- 2.5 oz dry lasagna noodles
- 0.5 cup heavy cream
- 0.25 cup parsley
- 1 to taste salt
- 1 to taste pepper
- 0.5 cup ricotta cheese
- 0.25 cup parmesan cheese
- 0.25 cup mozzarella cheese
- 0.25 cup parsley
Instructions
- Heat 1 tbsp cooking oil in a heavy pot on medium high heat.
- Add the diced onions, minced garlic, and minced veggies (if you’re trying to hide veggies like me) to a pot. Sauté until the onions are fragrant.
- Add the ground beef and pork and brown the meat.
- Add the tomato paste, marinara sauce, red wine, beef broth, dried oregano, and lasagna noodles. Bring the soup to a boil then reduce the heat to a simmer.
- Cook the soup for 7-12 minutes or until the noodles are done, stirring the soup occasionally to prevent the bottom burning.
- Add the heavy cream, chopped parsley, and season with salt & pepper to taste.
- Serve with a couple scoops of the ricotta cheese topping and garlic bread.
