Gochujang Sesame Noodles

A riff on VIRAL GOCHUJANG NOODLES with nutty sesame and umami-rich miso. The result is chopstick after chopstick of saucy flavours.

Gochujang Sesame Noodles

Ingredients

  • 1 package noodles
  • 1 pot water
  • 2.5 cloves garlic cloves
  • 3.5 tsp gochugaru
  • 0.75 tbsp sesame seeds
  • 1 handful spring onions
  • 1.5 tbsp hot sesame oil
  • 1.25 tbsp Gochujang paste
  • 1.75 tbsp tahini
  • 1 tbsp rice vinegar
  • 1 tbsp lime juice
  • 2 tbsp chilli oil
  • 0.5 tbsp miso
  • 2 tbsp soy sauce
  • 2 tsp sugar or honey
  • 1 tbsp lime juice
  • 1 dollop hot sauce
  • 1 package noodles
  • 1 splash noodle cooking water
  • 1 handful spring onions
  • 1 tbsp sesame seeds

Instructions

  1. Cook noodles of choice in a pot of boiling water. Drain and set aside, reserving some of the noodle water.
  2. To a heat-proof bowl, add finely chopped garlic cloves, gochugaru, sesame seeds and a handful of spring onions.
  3. Gently heat 1.5 tbsp of hot sesame oil and once hot, pour it over the chilli-garlic mixture. Let it sizzle for a few minutes.
  4. Whisk in the remaining ingredients: Gochujang paste, tahini, rice vinegar, lime juice, chilli oil, miso, soy sauce, and sugar or honey.
  5. Taste and adjust according to preference, for instance adding more lime juice for a zing. You could even add a dollop of your favourite hot sauce to amp up the heat.
  6. Now mix in the noodles along with a splash of the noodle cooking water. Toss until evenly combined and serve with more spring onions and sesame seeds for garnish.
